You can fill those buggars with whatever you like!
Here I used romaine lettuce leaves, shredded courgette, carrot and red cabbage, julienned red peppers, avocado strips, mung bean sprouts, and parsley. Pack everything onto one side of the nori sheet and wrap it up tightly, rolling diagonally.
Serve with a peanut sauce dip:
Blend up peanut butter, juice of lime, chilli, coriander, salt and some added water to a creamy salsa.
